…a symphony of carefully selected cured meats from like-minded producers who share our values. Our standout offerings include Grigio del Casentino and Cinta Senese hams, Capitelli cooked ham, Favola mortadella, and an array of cow, sheep, and goat cheeses presented in various stages of freshness, seasoning, and refinement.

Dive into a world of culinary delights with unique examples like Pecorino aged in hops, fresh Pecorino with raw milk, goat’s Camembert, and lactic Toma with raw milk sourced from a reputable Gambassi Terme dairy. The experience extends beyond Tuscan borders, featuring a must-try high mountain Parmigiano Reggiano, aged for 24 or 30 months. Despite its extensive maturation, this Parmigiano is a buttery revelation, offering notes of grass from the pristine high-altitude pasture.

Complementing these gastronomic gems are our fresh offerings, including mozzarella, burrata, stracciatella, and ricotta—key ingredients that weave their way into our delectable deli dishes.

Every day, from Monday to Saturday, in our Gastronomia you will find express dishes, made by our cook using only prime  materials that are on sale in our shop. Which you can taste first, together with a glass of wine from our cellar, thanks to the service at the table we offer for lunch and for the cocktail hour.

The vegetables will be grown in our bioactive vegetable garden, taken care by the agronomist Andrea Battiata, in a charming setting in front of the new winery of the Tachis family, and used in the preparations of all the express dishes present in the food counter: in oil, inside flans, terrines or in our ragùs, like the Etruscan ragù, a rediscovered ancient Tuscan recipe entirely vegetarian.
